Semolina with sun dried tomatoes and thyme

We had some sun dried tomatoes in the cupboard which needed to be used. Also there was some thyme sitting next to them.

I have no notes about this bake! It appears that I incorporated the thyme before the tomatoes.

The oven spring wasn’t great, maybe because of the weight of the tomatoes and oil? It’s hard to tell from the photo, but it’s a little flat.

The pan loaf developed a nice crisp along the pan but ended up kind of blanched looking on the top, even though it was not underbaked.

I was worried it would be overpoweringly sun-dried-tomato-y. However, my taste testers gave it great reviews!
